Prosecco has a very long history, having its roots in the times of the Roman Empire. Allegedly, the wine had been already known and produced near the Pucino village, but first without bubbles. The bubbles appeared much later, as a result of climate conditions and people’s efforts to store new wine after harvest until spring, when it started to work again.
Prosecco is wine produced from Glera grapes, which can be found only in Veneto and the Fruili-Venezia Giulio region, in the vicinity of Treviso, on the hills between Conegliano and Valdobbiadene.
A wine school operates now in Conegliano, and Valdobbiadene has been recognized as the capital of Prosecco.
Prosecco is made using the Charmat-Martinotti method, also called Prosecco. The fermentation takes place in large, tight containers, and then the wine is poured into specially-shaped bottles, which can endure and keep the pressure inside.
This method is much cheaper which allows this fantastic wine paving the way for tables in many countries, beating the French champagne with the amount of sold bottles.
